These are some of our favorite recipes that our entire family enjoys.


Nachos
Quick and easy snack or dinner with grass-fed beef. First, I heat the oven to 350 degrees. Then I brown the ground beef. While cooking the meat, I cut up tomatoes, cilantro and any other toppings I'd like. Sometimes we open a can of beans or add jalapeƱos. Lastly, place chips on a cookie sheet, add meat and cheese and bake for about 5 minutes. I like placing my fresh ingredients on after the cheese is melted. Enjoy!

Chestnut Hummus

Roasted Chestnuts
We enjoy eating roasted chestnuts for breakfast or around a campfire. You will need to score the chestnut with a knife, from pole to pole if you look at it like a globe. Then in a dry cast iron pan, cook on medium heat for about 10 minutes. Shake the pan or stir occasionally. When the chestnut pops open more than your original cut, they are done.

Ribeye steaks
Honestly, this is the best steak I have ever eaten. A tender, flavorful, grass-fed ribeye prepared by reverse-searing.

Leftover sirloin with feta cheese was a treat for lunch.

Filet & Strip Steaks
We conducted an experiment with reverse searing (cook in oven at 180 degrees for 45 minutes) and then sear on grill for a minute or two at the end. The filets are undoubtedly the most tender of the cuts. The strip steaks were flavorful and delicious. The reverse searing brought out more juices and flavor in the steaks, but grilling was still delectable.

Barbeque Beef
This recipe is nice for feeding a group. Just place all the ingredients in a crock pot and then serve on a bun. Ingredients: -1-2 chuck or arm roasts -1 stalk of celery -3 onions -1 small container of ketchup -1 oz. dry mustard -3 TBSP barbeque sauce -3 TBSP vinegar -1 tsp tabasco -2 TBSP chili powder -2 TBSP salt -1 tsp black pepper Cover with 1.5 cups of water. Bring everything to a boil and then simmer for 3-4 hours.

Lamb Curry

Lamb Chili
